Use up your leftover chocolates to make these tasty cookies!
I don't think I'm the only household who has left over chocolates after Christmas. It got to the point where I was tired of eating them as they are and I fancied baking with them, so thought why not stir through cookies? I actually made these back in February - but don't be alarmed! Most chocolates have a pretty long shelf life but I don't think many people notice because the chocolate doesn't last too long! This box of Celebrations had a 'Best Before' of August 2026 which is plenty of time to work through. But cookies are sometimes needed so I'm giving you an easy recipe to make these delicious cookies whether it's with children, friends, family or even just yourself for a little baking time.
And the best thing about using chocolate box chocolates in cookies, is every bite gives you a different flavour, keeping you guessing. Celebrations chocolates are my favourite, they are the best and I won't hear any different from the *other chocolates*. They just aren't as good I'm afraid, though second place goes to Heroes <3. Christmas time for me is having Celebrations on the table in the living room, watching films feeling all cosy. But Celebrations let's not forget are sold all year round, you don't need to wait till Christmas to make these!
Side note: I've mentioned Celebrations a lot in this recipe, but you really could use any box of chocolates, I just needed to use up and prefer Celebrations :).

Recipe
Prep: 15 minutes + 2 hours chilling time
Cook: 12 minutes
Serves: 12 cookies
Ingredients
- 120g butter, melted
- 100g caster sugar
- 100g light brown sugar
- 1 large egg about 60g
- Splash of milk (if needed see method)
- 240g plain flour
- ½ tsp bicarbonate of soda
- Pinch of salt
- 300-400g leftover chocolates (I used Celebrations) chopped
Method
- Line x2 large flat baking tray with baking paper and set aside.
- Melt the butter then add to a large bowl with both sugars mixing together with a whisk.
- Add the egg (if it weighs less than 60g add a splash of milk to make up the weight) and mix into the butter/sugar mixture.
- Sift the flour, bicarb and salt together then fold into the wet mixture to make a cookie dough. Stop folding once combined.
- Finally fold most of the chocolates into the cookie dough saving a handful for after baking.
- Weigh out the cookie dough to get 12 equal sized balls.
- Place onto the lined trays spread out and then place in the fridge for about 2 hours.
- Once chilled, preheat the oven to 180℃.
- Bake the cookies for 10-12 minutes until golden. Once baked, press the leftover chocolates on top of the cookies.
- Leave to cool for 5 minutes on the trays then move onto a wire rack to cool.
- Best stored in an airtight container for up to 4 days. Enjoy!
