Delicious cookie dough stuffed with M&M's
It's like I always say, I love cookies, but when you make cookie BARS you get more than jut a circle of dough. You get a whole square and it's even better when they're stuffed with M&M's. You know, I've only in the last few years really eaten M&M's. We never had them as a child, I guess because they're more American? And even going to the cinema it was always popcorn, I just did not try M&M's till maybe 3 years ago which I know is a little weird because I see them everywhere. I mean there's even a dedicated M&M shop in London. But it's okay but I'm making up for lost time. What is your favourite M&M? I think mine has to be the crispy ones? Similar to a Smartie dare I say it. Equally both as good. Anyway back to M&M's....
I've done what I do best and put them in a baked good. I bought loads of packets of different M&M's because I couldn't decide which ones to feature and they all taste delicious. The mini ones are extremely moreish! These cookie bars are really easy to make, the dough comes together nicely and then it's just baking till golden. I really hope you like them :)

NOTES:
- I used a mix of different M&M's because I wanted different textures but you could use any you like.
- I've used a mix of brown and white sugar here because the brown gives that extra moisture and sweeter notes. I haven't tried with just white sugar, so if that's all you have give it a go and let me know how they turn out!
- You can slice these into 16 smaller squares if you prefer.
RECIPE
Cook: 20 mins
Serves: 12
Ingredients
115g butter, melted
55g caster sugar
135g light brown sugar
1 medium egg
1 tsp vanilla extract
250g plain flour
1 tsp bicarbonate of soda
½ tsp salt
350g M&M's
Method
- Preheat your oven to 190ºc/170ºc fan and line a 9x9inch square tin with baking paper.
- In a larger bowl, add the melted butter and the two sugars, and whisk for about 2 minutes so the sugar starts to dissolve and the mixture is smooth.
- Add in the egg and vanilla extract, and mix.
- Add the plain flour, bicarbonate of soda, salt and cornflour and mix to a cookie dough.
- Add most of the M&Ms (save a handful of each for on top) and mix into the cookie dough.
- Press the mixture into the bottom of the tin, making sure it is even.
- Bake the traybake in the oven for 20 minutes, until golden.As soon as the cookie bars are out of the oven, press the rest of the M&M's into the top - it's best done when they are warm so they stick and you can press them in easier.
- Leave the cookie bars to cool in the tin for about 10 minutes, then lift out of the tin and leave to cool fully on a wire rack. Cut into 12 squares and serve. Enjoy!
