Carrot Cake Cookies

All of the Carrot Cake flavours you crave but in cookie form!



These days I'm going crazy for carrot cake. If you're like me and are after that delicious taste of carrot cake but also really fancy a cookie then look no further, what you need is a carrot cake cookie! So simple! A lot of recipes I have seen of carrot cake cookies suggest oats as the main substance but I thought that made them more of a "healthy breakfast" item which is not what I fancied. I wanted that gooey cookie texture, soft on the inside, a little bit chewy and packed with those yummy carrot cake aromas. And I think I nailed it. I mean you could totally have these for breakfast as well ;)

Recipe

Prep: 15-20 minutes
Cook: 12-15 minutes
Serves: 15 cookies

Ingredients

230g Plain flour
125g Vegan butter
170g Light brown sugar
120g Carrots grated
1tsp Baking soda
2tsp Cornflour
1tsp Cinnamon
½ tsp Nutmeg
¼tsp Ground cloves
Pinch of salt
2tsp Vanilla extract
80g Sultanas
50g chopped walnuts
x1 tub Dr Oetker Cream Cheese style icing 




Method

✿Preheat your oven to 180℃ and line a couple of baking trays with baking paper.
✿In a bowl, mix together the flour, spices, baking soda, cornflour and salt and set aside.
✿Melt your butter in the microwave, and then using an electric mixer whisk together the butter and sugar until combined. Add the vanilla and mix again.
✿Add the dry ingredients to the sugar mixture and mix altogether. Fold in the carrots and sultanas and stir well till even throughout.
✿Scoop about 1tbsp of the mixture into your hands and roll into a ball - I weighed mine on the scaled and each ball weighed between 1.7-1.9oz - this got me 15 cookies, if you want more you can make them smaller. 
✿Once rolled place them on the baking tray leaving some distance for them to spread out when baking.
✿Bake for 12-15 minutes - if you want a softer cookie 12 mins is good, if you want crispier, cook for longer.
✿Allow to cool on a baking tray for about 15 minutes.
✿Melt the cream cheese icing in the microwave for about 20 seconds and then drizzle across the cookies. Place an extra little dollop in the centre of the cookie and then sprinkle some walnuts on top. Enjoy!
