Funfetti Party Ring Cupcakes

Sweet vanilla cupcakes full of sprinkles, perfect for a party!


It's been a while since I had party rings, they were most definitely a staple in my childhood and something to be expected at any children's birthday party. There's something quite special about them which leaves you wanting more, you most definitely can't just have one! I'm pretty sure at one stage I've probably demolished a whole pack of theme easily. And speaking of parties, it's not a party without a cupcake right? My funfetti cupcakes are packed with sweetness and moisture and are so simple to make in no time at all. You can use whatever sprinkles you like to create them, but an absolute must is the party ring topping, no negotiations there :)

Recipe

Prep: 10 minutes
Cook: 15-18 minutes
Serves: 12 cupcakes


Ingredients

200g Self-raising flour
200g Caster sugar
120ml Soya milk
100g Soya yoghurt
tbsp Apple Cider Vinegar
35g Sprinkles - I used multi-coloured ones
75g Vegan butter
1 tsp Vanilla extract
1 tsp Baking soda
Pinch of salt
Buttercream
250g Vegan butter - I like Floral Plant based unsalted butter
500g Icing sugar
1 tsp Vanilla extract
Sprinkles

Method


✿Preheat your oven to 180℃ and line a 12-hole cupcake tray with cases.
✿Mix your soya milk with the apple cider vinegar to make a "buttermilk" and let sit for a few minutes. Melt your butter in the microwave or over the hob and leave to cool.
✿In a large bowl, add flour. sugar, sprinkles, baking soda and salt and mix together. Pour in all of the wet ingredients and fold gently till combined but careful not to over mix.
✿Using two spoons, add the cake mixture to the cupcake cases evenly filling each one about ⅔ full. Bake for 15 minutes or until a knife inserted comes out clean. Once cooked, leave to cool before piping. I usually leave them covered so they don't dry out. 
Meanwhile make your buttercream.
✿Using an electric mixer, beat the butter until it is smooth and creamy, this should take about 3-5 minutes. 
✿Gradually add your icing sugar whilst the mixer is on a spoonful at a time then A
add the vanilla. When it is pale and still spreadable it is done. Spoon into a piping bag ready to pipe onto the cupcakes.
✿Pipe some buttercream on to each cupcake, sprinkle with sprinkles and top with a couple of mini party rings. Keep in the fridge to keep the buttercream firm especially if it's hot outside. Enjoy!
