Smarties Valentines Day Cookies

Spread love this Valentine's Day by making a batch of these pink, red and white cookies made with Smarties!

Sometimes I find that Valentine's Day desserts can be overcomplicated and that's not always ideal when you're trying to show your acts of service is it? Don't get me wrong, I love the idea of someone spending hours on a fruity pie or showing some skill with a chocolate fondant but I know it's a little ambitious. Which is it's nice to have a tray of cookies ready and waiting when you don't have much time for a showstopper. And everyone loves cookies so it's a win, win. To make them fit with the theme of Valentine's Day I've simply added red, white and pink smarties along with some pretty sprinkles. These an be found in most supermarkets and don't cost a fortune either. And if you want to add some extra indulgence, they're great with ice-cream! I hope you're also showing yourself some love this Valentine's Day as that's the most important.

Recipe

Prep: 15 minutes + 2 hours chilling time
Cook: 12 minutes
Serves: 12 cookies

Notes:

  • If you want your cookies to look very circular, as soon as they come out of the oven use a large round cookie cutter and gently place over the cookie to round the edges. 
  • The cookie scoop I use is this one and I highly recommend as it proportions the cookie dough pretty evenly and also creates quite a nice round cookie once baked. 
  • The chilling time is important so that the cookies don't spread too much when baking. You can even leave them overnight if you have time. 

Ingredients:

  • 120g butter, melted
  • 100g caster sugar
  • 100g light brown sugar
  • x1 large egg (about 60g)
  • 240g plan flour
  • 1 tsp vanilla extract
  • ½ tsp bicarbonate of soda
  • pinch of salt
  • 200g red, white and pink smarties 
  • 2 tbsp sprinkles


Method

  1. Line x2 large flat baking tray with baking paper and set aside.
  2. Melt the butter then add to a large bowl with both sugars mixing together with a whisk.
  3. Add the egg (if it weighs less than 60g add a splash of milk to make up the weight) and the vanilla and mix into the butter/sugar mixture.
  4. Sift the flour, bicarb and salt together then fold into the wet mixture to make a cookie dough. stop folding once combined.
  5. Finally fold most of the smarties into the cookie dough saving a handful to the side.
  6. Use a cookie scoop to portion the cookie dough into 12 pieces onto the lined trays. 
  7. Press the remaining smarties on top. Place the sprinkles into a bowl then roll the top of the cookie dough into the sprinkles so they stick. 
  8. Place the cookies into the fridge for about 2 hours. 
  9. Once chilled, preheat the oven to 180℃.
  10. Bake the cookies for 12 minutes until golden.
  11. Leave to cool for 5 minutes on the trays then move onto a wire rack to cool completely. 
  12. Best stored in an airtight container for up to 4 days. Enjoy!
