Cinnamon Roll Blondies

That delicious cinnamon roll flavour but in a gooey blondie!


Oh wow. These are incredible. I fancied a cinnamon roll, but I really didn't want the nuisance of making dough, letting it rise etc, I needed the flavour NOW. So I put that sweet, spicy cinnamon into some blondies which are a real love of mine. A drizzle of caramel on top and it was hard to share these. Next time I will try a cream cheese glaze but I had leftover caramel and it made sense to put these two together. 

If you love cinnamon rolls as I'm sure a lot of people do, you'll love these, and they're not so heavy. Plus with these you can so go back for seconds as you'll want some more ;)

Recipe

Prep: 10 minutes
Cook: 25-30 minutes
Serves: 12 slices


Ingredients

Blondies
180g Vegan butter
220g Light brown sugar
100g Granulated sugar
60ml Plant-based milk
2 Vegan eggs - I used egg replacer or you can use flax eggs or chia eggs
1 tbsp Vanilla extract
220g Plain flour
1 tbsp Cinnamon
1 tbsp Baking powder
Pinch of salt
Cinnamon Filling
60g Vegan butter
55g Light brown sugar
1 tbsp Cinnamon
Pinch of salt
Caramel glaze optional


Method

✿Preheat your oven to 180℃ and line a brownie tray with baking paper.
✿In a large bowl, beat your butter and both sugars together until fluffy.
✿Add the vegan "eggs" and vanilla and beat until combined.
✿In a separate bowl, whisk together the flour, cinnamon, baking powder and salt. Then add the wet mixture to your dry ingredients and mix till all combined.
✿Pour into the brownie tray and smooth out evenly.
✿To make your cinnamon filling, simply whisk everything together and fluffy. Dollop the mixture in different parts of the blondies and then use a knife or a skewer to swirl it around.
✿Bake for approximately 25-30 minutes until golden. Can be a little under baked to make them gooey, they will harden as they cool down anyway.
✿I drizzled caramel on top once they had cool, but you can do as you wish! 
Serve with ice-cream. Enjoy!
