Bakewell Tart

Prep: 30 minutesCook: 25-30 minutes + 2+ hours chilling time
Serves: 20 squares
Ingredients
Shortbread200g Vegan butter
100g Caster sugar
275g Plain flour
Caramel

Chocolate
200g Vegan milk chocolate
100g Vegan white chocolate
Method
✿Preheat your oven to 180℃ and grease and line a rectangle baking tin with baking paper.✿Make the shortbread. Cream together the butter and sugar until pale and fluffy. Add in the flour and beat till you have a dough.
✿Press the dough into the bottom of your baking tin making sure it is flat and even and then pop in the oven for 25-30 minutes or until it is golden on top. Once baked leave to cool in the tin.
✿Meanwhile make the caramel using this recipe. Then pour the caramel over the shortbread and place in the fridge for an hour till it is set.
✿Melt the milk chocolate in the microwave in 20 seconds intervals stirring in between and then pour over the caramel. Then melt the white chocolate and dollop in random places. Using a skewer drag it through the white chocolate to create a swirly pattern.
✿Place back in the fridge until solid and then to cut up use a hot knife to cut into squares. Enjoy!
